Soda University: Iced Banana Latte

A morning pick me up with a fruity twist. Yes, you will go bananas for this.
Ingredients
Banana Syrup:
• 2 ripe bananas mashed
• 1 cup brown sugar
• 1 cup water
• ½ teaspoon cinnamon
• ¼ teaspoon nutmeg optional
• Pinch of salt
• ½ teaspoon vanilla extract
Iced Banana Latte:
• 2 shots of espresso
• 1 tbsp Banana Syrup
• ½ cup oat milk
• Ice
Directions
- In a small saucepan, combine the mashed bananas, brown sugar, water, and a pinch of salt. Whisk everything together until smooth.
- Bring the mixture to a gentle boil, then reduce the heat and let it simmer on low. Whisk occasionally and let it cook for about 10 minutes, or until the sugar is fully dissolved. (Keep the heat low)
- Strain the syrup through a mesh strainer, pressing down on the bananas to extract as much liquid as possible.
- Stir in the vanilla, then let the syrup cool completely before transferring it to an airtight container.
- To make your drink, pour some of the syrup into the bottom of a tall glass. Fill the glass with ice and top with your favorite plant-based milk.
- Brew a double shot of espresso and pour it over the milk. Give it a good stir and add more syrup if you’d like it sweeter. Enjoy!
