Need a vacation but don’t have PTO? Pour yourself this drink and you’ll feel like you’ve just escaped to paradise.

Ingredients

• 1 cup of pineapple juice⁣

• ½ cup coconut milk ⁣

• ½ cup sparkling water⁣

• 6 to 8 mint leaves⁣

• 2 tbsp of lime juice⁣

• 2 tbsp of honey⁣⁣

Add the mint leaves and lime juice to a cocktail shaker or mixing glass. Use a muddler or the back of a wooden spoon to gently press the mint—just enough to release the oils without shredding the leaves.
Next, pour in the pineapple juice, coconut milk, and your sweetener of choice. Add a handful of ice, then shake well until the mixture is creamy and nicely chilled.
Strain into a glass filled with fresh ice. Top it off with sparkling water or soda water, and give it a gentle stir to bring it all together.
Finish with a slice of lime, a wedge of pineapple, and a sprig of mint for a tropical, refreshing touch. Serve right away and enjoy!
